Clams Newberg

Ingredients
- 10 clams out of the shells
- A piece of butter
- Salt and pepper
- 2 Tbsp. Sherry wine
- 3 egg yolks
- A little fresh cream and butter
Method
- Heat a piece of butter, add 10 clams out of the shells; season with salt and pepper and fry.
- Add 2 Tbsp. Sherry wine. Cover and let cook.
- When done thicken with 3 egg yolks diluted with a little fresh cream and butter.
- Warm and serve in a chafing dish. Do not boil.
