Broiled Clam Canapes

Makes 36 canapes
Broil
2–3 minutes, 3 inches from heat

Ingredients

  • 10 minced clams
  • 1 – 3 oz. pkg. cream cheese
  • 1/2 tsp. salt
  • 1 Tbsp. lemon juice
  • 3 drops Tabasco Sauce
  • 1 egg white, beaten stiffly
  • Crackers or toast squares
  • Paprika

Method

  1. Drain clams. Soften cheese at room temperature.
  2. Combine cheese seasonings and clams.
  3. Fold into stiffly beaten egg whites.
  4. Spread onto crackers or toast squares. Sprinkle with paprika.
  5. Place on broiler pan, about 3 inches from heat. Broil 2 – 3 minutes.
  6. Serve at once. Makes 36 canapes.
