Clam Corn Casserole

Ingredients

  • 8 minced clams
  • Milk
  • 3 eggs, beaten
  • 1 Tbsp. onion
  • 2 Tbsp. chopped pimentos
  • 1/2 tsp. salt
  • 1 can cream style corn
  • 1/2 c. cracker crumbs
  • 1 Tbsp. melted butter
  • Dash of cayenne

Method

  1. Drain liquid from clams, add enough milk to make 1 c. liquid and combine with beaten eggs.
  2. Add remaining ingredients and pour into greased casserole.
  3. Bake in moderate oven, 375, until firm, about 45 minutes. Serves 6.
