Eggplant-Clam Casserole

Ingredients
- 1 medium sized eggplant, peeled and cubed, slightly parboiled
- 1 c. finely chopped clams
- 2 eggs
- 1 c. cracker crumbs
- 1/2 tsp. salt
- 1/4 tsp. white pepper
- Butter
Method
- Slightly parboil medium sized, peeled and cubed eggplant.
- Combine 1 c. finely chopped clams, 2 eggs, 1 c. cracker crumbs, 1/2 tsp. salt, 1/4 tsp. white pepper.
- Fold mixture (carefully) into eggplant.
- Dot with butter. (6x9 casserole.)
- Bake at 350 for 30 minutes in well buttered casserole.
