Abalone Pot Roast

Ingredients

  • 2 – 3 whole abalone
  • 3 Tbsp. olive oil or butter
  • 1/4 c. minced onion
  • 1/4 c. parsley
  • 1/2 c. hot water
  • 1 c. tomato sauce
  • 3/4 c. dry white table wine

Method

  1. In Dutch oven lightly brown abalone on both sides in oil.
  2. Add parsley and onion and hot water.
  3. Cover tightly and bake at 300 for 30 minutes.
  4. Add tomato sauce and wine. Cover and bake 1 hour or until tender.
  5. Season with salt and pepper if desired.
