Christmas Salmon

Ingredients

  • 1 large can red pimentos
  • 2 c. cooked salmon
  • 3 Tbsp. butter
  • 4 slices buttered toast
  • 1 c. tomatoes
  • 1/2 c. crumbs
  • 1 tsp. salt
  • 1 tsp. pepper

Method

  1. Put tomatoes and toast in bowl.
  2. Add salmon and seasonings and mix well.
  3. Fill pimentos with mixture.
  4. Place in baking dish close together, sprinkle with crumbs and dots of butter.
  5. Bake for 20 minutes at 375.
  6. Serve with parsley or watercress.
