Arroz Con Almejas

Ingredients
- 1/4 c. olive oil
- 1 medium size onion, chopped
- 2 cloves garlic, minced
- 1 tsp. paprika
- 2 Tbsp. minced parsley
- 6 – 8 Pismo Clams in the shell
- 5 c. clam broth or nectar
- 2 c. uncooked rice
- Salt and pepper to taste
Method
- Fry onion in oil, add garlic, paprika and parsley.
- Scurb [scrub] clams well and using 1/2 c. water steam until clams open.
- Strain juice through double cheesecloth, add enough water to make up the 5 c.
- Add onion mixture, rice, salt and pepper.
- Simmer about 30 minutes until all liquid is absorbed, adding clam meat the last 5 minutes of cooking. Serves 6 – 8.
