Clam Fritters

Ingredients

  • 4 – 5 minced clams
  • 1 egg
  • 1 c. flour
  • 1/3 c. clam juice or milk
  • 1/2 tsp. baking powder
  • 1/2 tsp. minced parsley
  • 1/4 tsp. salt
  • Pepper to taste

Method

  1. Sift flour, baking powder, salt and pepper together.
  2. Add clam juice or milk, and egg well beaten.
  3. Mix well and stir in clams and parsley.
  4. Drop by tablespoonfuls into deep boiling fat.
  5. Fry until golden brown on all sides.
  6. Drain well on crumpled paper.
