Tuna Avocado Salad

2 filled avocados

Ingredients

  • 1/2 c. cooked tuna
  • 2 tsp. prepared mustard
  • 1 Tbsp. chopped pickled onions
  • 2 tsp. lemon juice
  • 1 Tbsp. chopped parsley
  • 1/2 c. mayonnaise
  • 1/2 tsp. anchovy paste
  • 1 tsp. prepared horseradish
  • 1 Tbsp. chopped capers
  • 2 ripe avocados

Method

  1. Break tuna into large pieces.
  2. Combine tuna, mustard, onions, lemon juice and parsley.
  3. Combine mayonnaise, anchovy paste, horseradish and capers; mix well.
  4. Add tuna mixture and toss lightly but thoroughly.
  5. Peel, cut avocados in 1/2; remove seed and fill with tuna mixture.
  6. Serve on crisp lettuce leaf.
