Clam Broth or Bouillon

Ingredients
- Clams, chopped, with their liquor
- A little water
- A little milk and butter (optional)
Method
- (Taken from a very old book.) Chop clams and put in a saucepan with their liquor, stew for 10 minutes with a little water.
- A little milk and butter may be added, unless required, plain.
- Strain and serve hot.

The book was a fundraising publication of the type common to civic groups, church auxiliaries, and fishing communities on the California coast in the mid-twentieth century — recipes contributed by named cooks, illustrated with hand-drawn section dividers, and printed locally.
